Ingredients (for four biscuits):
- 200 grams of rice flour
- 92 g Philadelphia cheese
- 80g of dates
- 80 g coconut oil
- a fresh egg
- two tablespoons of pure cocoa powder
- 12ml soy drink
- some vanilla flavor
The first thing we have to do is the date paste, we can also buy it ready-made and save ourselves this step. It’s very simple, we have to heat the dates in the microwave along with some water and then grind them until they have a creamy consistency. We need to save a spoon to use later in the filling.
Now we mix the rest of the date paste with the egg, coconut oil, rice flour, pure cocoa powder and half a teaspoon of vanilla flavoring. It’s time to preheat the oven to 180°C.
We knead everything well and form the cookies. We must try to make them the same size, for this it is best to use a glass or a mold so that they come out the same.
Then we bake the cookies for 10-12 minutes, still separate because we haven’t finished the filling yet. Meanwhile we prepare the filling.
The filling is very easy to make. We need to mix the Philadelphia cheese with half a teaspoon of vanilla flavoring, a dash of vegetable drink (in my case I use soy) and the tablespoon of date paste.
After 10 minutes, remove the cookies from the oven and let cool. Once we have them ready, we select the possible pairs, fill them with the cream and put them together. Then we simply store them in an airtight jar to give them a longer shelf life and/or eat them straight away.
